And voila, a golden-brown chapatti is ready to wrap dinner. For children in the orphanage that’s usually black beans laced with strips of shaved kale.

Making Chapati

Today, they’re making chapatti, a Kenyan tortilla, that is one of the staples of the local diet. It starts with forming the maize flour into dough.
